Casa Bagel Celebrates Grand Opening With Family and City Leaders in Rahway
Family, city officials celebrate the long-awaited opening of the new bagel shop at Lincoln Plaza

Casa Bagel held its grand opening ceremony on Tuesday in Rahway, drawing family members, friends, city officials, and Mayor Raymond Giacobbe.
Giacobbe said the event reflects the strength of Rahway’s small business community.
“I love the fact that I walk around through our businesses and the owner is usually there working,” the mayor said. “This is a great example of a family-owned business that invested in the City of Rahway.”
Casa Bagel is owned by partners Wilson Hincapie and Wilmar Londono, who said they were both excited and relieved to reach the opening milestone. The shop occupies a former liquor store at Lincoln Plaza, on the corner of Route 27 and Colonia Boulevard. The building underwent extensive renovations and now holds several new storefronts.
“It was a hard process because it took a long time,” Londono said. “We were expecting four, five, or six months, but it ended up being almost a year.”

Hincapie said the delays were largely due to the time required for the landlord to secure permits to subdivide the strip mall into separate units.
“It was time that we lost, but everything worked out in the end,” he said.
Their persistence appears to be paying off. The shop already has a 4.8-star rating on Google, with dozens of reviews, and Giacobbe said he has stopped by for breakfast.
“We’re going to do everything we can as a community to help them thrive and be successful,” the mayor said.
The owners are supported by a close-knit group of family members, including Juliana Londono, Wilmar’s daughter, who previously worked for Hincapie as a teenager.
“Somehow they got together, and here we are, full circle,” she said. “It started as me just helping out, and it turned into a full-time gig. But that’s what we do for family.”

Casa Bagel is open seven days a week from 6 a.m. to 3 p.m. In addition to its bagels, Hincapie encourages customers to try the grilled chicken wraps for lunch.
“The people who try them usually come back for them,” he said.
